Beauty is in the Eye of the Beholder, Right?

Finally picked up my camera today. It was so nice outside. The weather that is. I had to really search for something to photograph, besides my kid of course. I found some funky stuff that grows in some of our trees and some little berries that were hanging on our neighbor’s fence. I really love macro. It really makes everything beautiful, in a different way.

Check out my Baked Ziti…

I got the recipe from the iFood app (made by Kraft) that I downloaded to my iPhone. Kraft recipes are my fave because they are so easy, they only use about 5-6 ingredients in all of them, and the ingredients are normal stuff, nothing fancy or “gross”.

Ingredients:
1 package of Penne pasta
1 jar of Spaghetti sauce (I used Ragu Traditional, and you should probably use 1 ½ jars so it will be extra saucy.)
1 bag of Mozzarella Cheese
¼ of a cup of grated Parmesan cheese (I used a liitle more than that)
1 container of Ricotta Cheese (I left this ingredient out because I don’t like Ricotta cheese)

Preheat oven to 350.
Cook the noodles according to the directions on the box. Drain them but save ½ a cup of the cooking water.
Pour the sauce in to a large bowl, mix in about ¼ cup of parmesan cheese and a few pinches of the mozzarella cheese.
Then pour in the saved cooking water and mix the noodles into the sauce.
Grease the bottom of a 13 x 9 pan and dump the noodles in. Spread them out evenly.
Then I sprinkled a little parmesan over the top and then used the remainder of the Mozzarella cheese to cover the top.
Cover with foil, cook 30 minutes, uncover and cook another 10 minutes or until the cheese is really melted well.
Then eat it! It’s as close to Luigi’s as I will ever be able to get at home.
(If you use the Ricotta just mix it in the sauce with everything else.)
